- You need 2 pinches of asafoetida.
- You need as per taste of Salt.
- You need 1 tsp of grated ginger.
- Prepare 1 tsp of red chilli powder.
- Prepare 1 tbsp of cumin coriander powder.
- Prepare 1/2 tsp of garam masala.
- Prepare As required of chopped Coriander leaves.

Turiya patra sabji instructions
- Cut steamed Patra rolls into 1/2 cm inch wide. Peel off ridge gourd skin and chop in into medium sized pieces.
- Heat oil in pan- when oil is hot add fennel, red chilli, asafoetida, and ginger and turmeric- cook it for few seconds..
- Add ridge gourd, salt and mix it well..
- Cook it on low flame for 7-8 minutes.the add red chilli powder, cumin coriander powder and garam masala.
- Add patra, mix it well and cook for another 3-4 minutes on low flame..
- When it’s done - switch off the gas and add chopped coriander and serve it hot with roti or puri..
