- The ingredients are shown below.
- Add your soaked and peeled beans into a blender, add the scotch bonnet, capsicum, red pepper and onion, pour in 1 1/3 glass of water and blend until a smooth paste is formed.
- Turn into a bowl, add 5 tablespoon of Palm oil, seasoning cubes, Curry powder, diced boiled egg, shredded spinach and stir.
- Grease a metal tin/ container with 1 tablespoon of Palm oil and pour the mixture into it.
- Place in a pot of hot water (1/4 of the pot to be covered by the hot water).
- Cook for 30 mins, insert a toothpick into the cooked moi-moi, when it comes out neatly it is done, serve and enjoy.
