- boil the water.
- add rice . remove from heat and leave until all water is absorbed..
- place rice into a bowl. don't use a utensil, dump the rice straight from the pot..
- combine rice vinegar salt and sugar in a sauce pan. heat on high until sugar is absorbed. note: swirl the pan to dissolve, vinegar shouldn't boil..
- pour vinegar onto rice, cut or fold ride with wooden spoon to mix vinegar. this will make the rice sticky..
- let the rice cool down..
- If you have a bamboo mat, cover it in cling wrap..
- dip hands in water and clump rice into a ball place on nori(seaweed) and spread it out..
- flip the seaweed so rice side is face down on the mat.
- add your veggies, fish, whatever you like and roll your seaweed..
- press firmly once you complete one revolution to seal the roll. continue rolling and press firmly again at the end to shape the roll.
- trim edges of the roll. cut in half then in half again..
